- Add your shortening, (I used Kimbo). Mix it well in to the floor
- Add your hot water into the floor mixture
- Knead your dough till it is soft and supple. Note: Do not add more flour to the dough as this will make the tortillas hard.
- Once you have knead your dough, this takes about 15 minutes. Allow it to rest for 20 mins
- As your dough is resting you can start on your beef.
- In a pan add your onions, garlic, and green bell pepper. Allow them to cook for a few minutes.

- Once cooked, let it rest and continue with the tortillas.

- In a hot iron cast, cook them one by one and place the in a container and cover them.
- Once you are done. You can now start layering your tacos, starting with the minced beef, then your kachumbari and lastly your avocado and coriander for garnish, as shown in the picture.
