  1. Take As much COLD left over risotto as possible (I used 3 portions)
  2. Take Plain Flour
  3. Prepare Breadcrumbs
  4. Prepare 1 egg
  5. Prepare Oil

Instructions to make Magical Arancini:
  1. Prepare your assembly line. Risotto, mozzarella, egg beaten in a bowl, flour, breadcrumbs in a bowl
  2. Form small balls of risotto, placing a very small piece of mozzarella inside each one.
  3. Tip: remove any large bits of filling from the outer edges (e.g. mushrooms, courgette etc.)
  4. Roll the balls in egg, then flour, then egg again and then breadcrumbs until entirely covered

  8. To bake - Spray or brush with oil and place in the oven at 180c for 20-30mins, turning once.
  9. To fry - Heat up a pan with oil (deeper the better). It’s hot enough if you drop a breadcrumb in and it sizzles.
