  1. Get 2 cups finely diced yellow onion
  2. Get Small poblano finely diced
  3. Get 1 red Chile finely diced
  4. Get 1 Jalapeño finely diced
  5. Take Medium tomato finely diced

  1. Add evo and heat, add all but the tomatoes to a pan and season with a coupe pinches of salt and some dried cilantro.
