The ingredients needed to prepare Tomato Basil Soup:
  1. You need 600 grams Firm Tomatoes
  2. Get 4 Garlic Cloves
  3. Prepare 1-2 tbsp Extra Virgin Olive Oil
  4. Use to taste Salt
  5. Use to taste pepper
  6. Take 1/4 Cup packed Basil Leaves
  7. Get 1 Cup low sodium Veg Broth
  8. Get 1/2 teaspoon Oregano
  9. Get 2 tbsp Corn Slurry Or Low fat Coconut Milk - Optional
Steps to make Tomato Basil Soup:
  1. Preheat oven to 180 deg and line baking tray with parchment paper
  2. Slice tomatoes and garlic cloves into halves. Add them to bowl. Season them with Salt,pepper and olive Oil
  3. Place them on baking tray and roast for 40-45 minutes
  4. Allow to cool for 15 minutes
  5. Blend tomatoes and garlic cloves until smooth and lump free
  6. Add basil leaves and blend well
  7. Add these mixture to deep bottom vessel
  8. Add Oregano, Salt and Veg broth. Mix well. Quantity of broth depends on how thick or thin soup you want
  9. Cook over low medium heat for 15 minutes
  10. If you wish to have creamier soup,add corn slurry now. Instead of corn slurry if you wish to add coconut milk or low fat cream, then add them towards the end. This is entirely optional step. If adding it, mix well and cook for another 5 minutes
  11. You can always add any other seasonings if you desire
  12. Serve hot. I have used Chia seeds and basil leaves to garnish.
