  1. Use 5 large Tomatoes
  2. Get 3/4 large SWEET onion
  3. Use 3/4 medium Jalepeno pepper
  4. Take 1 medium Pablono pepper
  5. Provide 3 tbsp Cilantro
  6. Prepare 1/4 cup Lime juice
  7. Take 3 tsp Cumin
  8. Take 1 tbsp Salt
  9. Provide 1 tsp Black pepper
  10. You need 1 tsp Garlic powder
Instructions to make Chris's Pico:
  1. Chop tomatoes into 1/4 in pieces, and place in large mixing bowl.
  2. Add most of the salt. Mix.
  3. Strain tomatoes and place back into mixing bowl.
  4. Remove seeds from jalepeno. You might think about wearing gloves when you do this! Rinse pepper. VERY finely mince and add to tomatoes.
  5. Remove seeds and finely chop poblano. This can be replaced with red martin peppers, or something close. A bell pepper in a pinch but I dont like the flavor as much.
  6. Finely chop onion. Vidalia is best. Add to tomatoes.
  7. Finely chop cilantro and add.
  8. Add seasonings and lime juice. Thoroughly mix and add more salt to taste.
