- Provide 1 tablespoon Olive Oil
- Get 1 Onion *finely chopped
- Provide 1-2 cloves Garlic *finely chopped

- Provide 1 Canned Diced Tomatoes *400g
- Get 360 ml Chicken Stock
- Get 2 cups (*180ml cup) Medium Grain Rice
- Get 1 Red Capsicum *cut into 8 strips

- Preheat the oven to 200℃.
- Heat Olive Oil in an oven-safe shallow saucepan or a skillet over medium heat and cook Onion and Garlic until soft. Add Tomatoes and Chicken Stock, and bring to the boil. Season with Salt & Pepper.
