- Get lamb
- You need 3 lb leg of lamb
- Get 3/4 cup marsala
- Provide 1 cup chopped carrots
- Take 8 chopped red potatoes
- You need 1 1/2 garlic cloves
- Take 1 1/2 tsp ground sage
- Use 2 tbsp rosemary leaves
- Provide 1 tsp oregano
- Take 1/4 cup chopped green onion

- pre-heat oven to 350°F
- slice lamb down to bone ( leaving the bone in) into 4-6 slices
- place lamb in glass baking dish and pour 1/2 cup marsala over top

- cover with foil and bake for approx. 1 hour or until meat thermometer ( placed in center) reads 145°F for medium-rare , 160°F for medium, or 170°F for well done.
- remove from oven, uncover, and bake for additional 5-10 min.
