The ingredients needed to cook Chicken & Rice:
  1. Take 1 -lbs chicken breast diced into big chunks (2”)
  2. Prepare 2 - cup parboiled rice
  3. Get 1/4 red bell pepper diced
  4. You need 1/4 onion diced
  5. Provide 2 cloves garlic minced
  6. Take 1/2 tsp cumin
  7. You need 1/2 tsp oregano
  8. Get 1 - chicken bullion
  9. Take Dash yellow food coloring
  10. Prepare 3 - cup water
  11. Provide 1 - cup cooking wine (white)

  15. Use 1 bay leaf
Instructions to make Chicken & Rice:
  1. Heat oil and brown chicken on both sides
  2. Once browned, add diced vegetables and minced garlic. Cook for 30 seconds then add the wine to deglaze.
  3. Add boiled carrots, rice, water and seasonings, stir, cover and cook for 20 min on med heat. Uncover, stir rice, adjust taste with salt & pepper, if it’s too dry add 1/2 cup wine and cover for 5 min so that rice absorbs moisture
  4. Uncover and serve. Enjoy
