Steps to make Vitamin Khichdi:
  1. Wash and soak moong dal in water for 2 hours. Drain and keep aside.
  2. Keep chopped vegetables ready. In another vessel boil 4 cups of water.
  3. Heat ghee in nonstick pressure cook,add cumin seeds, cinnamon stick and cloves, bay leaves,as cummin seeds splutter add all chopped vegetables, turmeric powder, garam masala and red chilli powder, saute on medium flame for 4-5 mins.
  4. Add soaked rice- dal & salt.
  5. Mix and saute for 2 mins.
  6. Add 4 cup of hot water.
  7. Pressure cook for 4 whistles. Cool pressure cooker for half hour, before opening it's lid. serve Hot Vitamin Khichdi with 1 tsp melted ghee on it… kadhi,papad,onion,pickle for complete meal.
