The ingredients needed to prepare Pepper mint, zucchini & apple bake:
- Get 1/2 cup butter, room temperature
- Provide 1/2 cup sugar
- You need 4 large eggs
- Take 1 cup flour
- You need 1/2 teaspoon baking powder

Instructions to make Pepper mint, zucchini & apple bake:
- Preheat oven to 165 degrees. In a medium size bowl, whisk or using a handmixer, the butter and sugar until nice and smooth. Please refer to the picture attached
- Add the 4 eggs into the sugar/butter mixture and mix for about 3 minutes
- In a separate bowl, sift the flour together with baking powder, baking soda and salt. This makes sure you don't have lumps in the flour. Slowly add the flour into the egg batter while mixing. Mix for about 5 minutes till it's nice and smooth. Add the essence, and mix again for about a minute
- Squeeze any excess juice from the grated zucchini and the grated apple. Removing excess liquid prevents the cake from being runny and raw. Add it to the batter along with the nuts and chocolate chips too. You can use chopped almonds or cashew nuts. I used macadamia nuts & mint chocolate chips. These ingredients need to be folded in. Do not use a mixer
- Bake at 165 C or 325 F for 45 minutes or until the top turns golden. Insert a clean toothpick into the middle of the cake and when it comes out clean, the bake is ready! Please comment for any questions, I'll try my best to answer them.
