- Get 1 large Onion, cut in half and into 1/4" slices
- Get 2 medium Carrots peeled, cut into 1/4" slices
- Get 2 tsp finely chopped garlic
- Prepare 1 tsp dried tarragon leaves
- Provide 1/2 tsp salt
- You need 1/2 tsp pepper
- You need 1/4 cup extra- virgin olive oil
- Provide 1 medium Red bell pepper, cut into quarter inch slices
